A perfect treat for Mother's Day

This week we baked on Tuesday (technically exploring day), instead of Thursday, because we were going to make Mother's Day crafts (which is not happening because most of us are under the weather) booo!!!

Introducing a great treat that will be a yummy addition to a Mother's day brunch -mixed berry yogurt muffins...


Makes 12-14 regular size muffins
Ingredients
2 cups all-purpose flour
1 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
eggs
2/3 cup Greek yogurt 
2 cups mixed berries (blueberries, blackberries, raspberries, strawberries)
*the strawberries weren't a hit
2 tablespoons flour (for berries)
Directions
1) Preheat oven to 400 degrees Fahrenheit. Line muffin cups with muffin liners.
2) In a medium bowl, mix together flour, white sugar, salt, and baking powder.
3) In a separate large bowl, add vegetable oil, 2 eggs, & yogurt - whisk to combine.
4) Add flour mixture to egg & yogurt mixture just enough to combine.
5) Combine berries with 2 tablespoons of flour. Fold in the berries into the batter.
6. Enjoy with your lovely mom!
