There's a phenomena that happens around this time of year...every single year (for as long as I can remember). I get sick. Sometimes it seems so small that I think I'm going to pass it, only for a little cold to turn into pneumonia, or a headache turns into a ridiculous sinus infection. 
Simply put, I am tired. My body is tired, as I am sure most parents are by the end of the year.
Has my fatigue affected my days with the children? Well, of course.
In the end I think it's about flexibility. I haven't been in the kitchen as much. In fact, our corn muffins were baked 3 days after they were on the menu, and circle time is filled with more story-telling (cause I still have my voice), than jumping around and singing.

We have also spent less time outside in the past week, because, while I put the great outdoors as one of the best forms of alternative medicines, I couldn't physically bring myself to dress 4 kids and get outside, then entertain them outside, carry around the ones that don't walk, and undress them upon returning. 
Yes, it was that kind of week. And the thing about asthma is that it doesn't really show on someone's face. Sure, if I went for a 5K run, I might show some signs of distress, but otherwise, it's just a nagging discomfort (once again my opinion), and you just get on with your day.
So dear parents, we always have something going on. We try to maneuver and make do with what energy, resources we have. That's what we did lastweek (a spill-over from the week before). Such is life. 

But make no mistake; life is no way at a stand still. Our days are never empty. 
We tried couscous soup on Monday aka Soup Day. We found the wonderful recipe here and I will add it at the end of this page.
On Tuesday we had our 2nd Show Me or Share Tuesday. One of our friends shared photos of some deer that he saw on his way to Small Wonders - how lovely!
Another friend brought home some artwork from school, and was able to show that off to his friends.
On Wednesday we created art..
Thursday , we began winding down,  and yours truly finally found the right vegan/gluten-free corn muffin combo. Finally, I made muffins that were NOT rock hard the next day :)
So there you have it...another week crossed off.

Couscous Chicken Soup Recipe


Ingredients
  • 1 Tablespoon Trucchi's Extra Virgin Olive Oil
  • 5 Scallions, Chopped (white and green parts separated)
  • 4 Cups Swanson Chicken Broth
  • ½ Cup Near East Couscous
  • 4 oz Carrots, Cut Into Chunks
  • 4 oz Baby Turnips, Quartered Lengthwise
  • Kosher Salt and Fresh Ground Pepper, For Seasoning
  • 2 Large Eggs
  • 3 Tablespoons Fresh Lemon Juice
  • 2 Cups Shredded Rotisserie Chicken, Skin Removed
  • 2 Tablespoons Fresh Parsley, Chopped

Instructions

  1. Heat up olive oil in a large pot over medium high heat. Add the scallions (white only) to the pot and let them cook for about 2 minutes, while stirring. When they are softened add in the Chicken Broth, 3 Cups Water, Carrots, Turnips and salt and pepper for seasoning. Bring to a boil. Reduce heat to medium low to let simmer. Let simmer for about 7 minutes and add in the Couscous. It should take roughly another 5 minutes for the couscous and veggies to be cooked.
  2. In a medium bowl, whisk the eggs and lemon juice together. Use a ladle to bring 1½ Cups of the hot broth into the egg mixture, Whisking Constantly. Take the shredded chicken and add to the pot, then whisk in the egg-broth mixture. Return soup to gentle simmer, then remove from heat. Add in Scallion Greens and Parsley. Season with Salt and Pepper. Serve and Enjoy!
