Chocolate chips pancakes was actually on the baking day menu. No reason, except for the fact that it's just 4 of us this week, and I wanted to just take a break from all the mixing of ingredients and etc.
But for some reason when I got out of bed this morning, I just knew we would have pancakes for breakfast. Chocolate chip pancakes- not much to say about them, we love them! I must say that this particular batch was gobbled up by the kids and my husband...nothing for little ole me. And when the big girls got home they too were disappointed that they were but a yummy memory.
Maybe next week...
you need
4 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
4 eggs
4 cups buttermilk
2 cups mini chocolate chips
1 cup salted butter, melted
you need to do
Whisk together dry ingredients: flour, sugar, baking powder, baking soda, and salt.
Set aside. In another bowl, whisk eggs, buttermilk and melted butter. Combine flour mixture and buttermilk mixture.
Fold chocolate chips into pancake batter. Cook pancakes on your skillet...
Top with chocolate chips and enjoy!
