Ingredients
1/3 cup extra virgin coconut oil
1/2 cup honey
2 eggs
1 1/2 tsp vanilla extract
3 to 4 medium to large, overripe bananas, mashed
1 3/4 cups whole wheat flour
1/2 tsp salt
1 tsp baking soda
1/4 cup hot water
3/4 cup chopped walnuts
Directions
- Preheat oven to 325 degrees F. Lightly oil and flour a 9″x5″ loaf pan.
- In a large mixing bowl, whisk the honey and oil together until well blended. Whisk in the eggs until beaten and incorporated. Incorporate the mashed bananas and honey. Stir in the flour and salt until all of the flour is moistened...be careful not to over-mix.
- Add the baking soda to the hot water, mix well and then stir into the batter.
- Add 1/2 cup of the chopped walnuts and stir to combine. Pour the batter into the prepared loaf pan and sprinkle the top with the additional 1/4 cup of walnuts.
- Bake in the preheated oven for 55 to 65 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Cool loaf in pan for 30 mins and then on wire rack for an additional 20 minutes before slicing.
